My husband says this guacamole is the best out there!  I may not do lots of cooking these days (This week, my youngest asked as I was putting his frozen chicken nuggets in the oven, “Can you do that thing where they aren’t too burned?”) but I must admit, my guacamole is really, really good:

Ingredients: healthy! love that!

Ingredients:

  • 2 avocados {firm when buying… SLIGHT give when ready to use; be careful: can cross that line from “perfect” to “mushy” within a day!}
  • 2-3 tomatoes
  • 1/2 lime
  • 2-3 cloves of garlic
  • 1/4 c purple onion, chopped
  • 1/2 c cilantro, chopped
  • 1/4 t salt
  • 1 T extra virgin olive oil
  • 1/8 -t jalapeno pepper, chopped {optional! IF you like it HOT!}

Put all ingredients into large mixing bowl {this is how I do it for minimal cleanup!}

  • Cilantro {cut off bottom part of stems & chop the rest using chef’s knife – see above pic}
  • Onion {use the same knife & cutting board for everything – just rinse in-between}
  • Tomatoes {slice in half and squeeze juice & seeds out – I do this over the sink – then chop; the pic below shows them after they’ve been squeezed}

Prep garlic cloves

Prep garlic gloves {cut tops of both tips then peel off outer layer} then press through garlic press {my favorite way:  helps the garlic really infuse; if you don’t have a press, finely chop & mash with bottom of spoon in bowl}

Add avocados {I cut through to the seed – all the way around, pull open, then squeeze fruit into bowl; I’ve heard that leaving one of the seeds in the bowl of ingredients keeps the avocado fresh longer so I leave it in until it’s time to serve!}

Add remaining ingredients {juice of the 1/2 of lime, salt, olive oil, and if you like it SPICY, a small bit of the jalapeno!}

GENTLY combine all ingredients together {I don’t use the word “mix” here – I’m not a fan of creamy textured guacamole – so I just use the side of my mixing spoon to gently combine the ingredients}

Served in dishes I found for $1 at Target!!!

Serve immediately – or cover tightly and serve within a couple of hours.

(USUALLY I’ll have with tortilla chips but when being really healthy I’ll eat with wasa crispbread.)
